Root Vegetable Soup
- 1 onion
- 1 large potato
- 1 large sweet potato
- 1kg of chopped carrots and turnip/swede
- 700ml chicken stock
- Salt and pepper to taste
Saute the finely chopped onion and diced potato. Cover with parchment paper for 5-10mins.
Add the remaining chopped vegetables and hot chicken stock. Bring to the boil and then simmer for 15-20 mins until the vegetables are cooked through.
Blend until smooth. Season with salt and pepper.
