Lemon, Almond and Cranberry Squares

Ingredients:
• 40g flour
• 40g butter
• 2 lemons
• 2 eggs
• 30g sugar
• 15g flour
• 1 teaspoon of baking powder
• 40g almond flour (ground almonds)
• 50g dried cranberries

Instructions:
• Preheat the oven to 180°C.
• Mix the flour and butter until a shortcrust dough is obtained.
• Press the dough into a 15cm square pan covered with baking paper.
• Bake for 20 minutes.
• Lower the oven temperature to 160°C.
• Gently zest the 2 lemons and juice of one of them.
• Beat the eggs and sugar until frothy. While mixing, add the lemon zest and juice, flour and baking powder, almond flour and cranberries.
• Pour the mixture over the pre-baked base.
• Bake for a further 40 minutes or until the top is golden brown.
• Wait until it has cooled completely before cutting into squares.
