Ingredients:

40g flour
40g butter
 2 lemons
 2 eggs
30g sugar
15g flour
 1 teaspoon of baking powder
40g almond flour (ground almonds)
50g dried cranberries
 

Instructions:

 Preheat the oven to 180°C.
 Mix the flour and butter until a shortcrust dough is obtained.
Press the dough into a 15cm square pan covered with baking paper.
 Bake for 20 minutes.
 Lower the oven temperature to 160°C.
Gently zest the 2 lemons and juice of one of them.
Beat the eggs and sugar until frothy. While mixing, add the lemon zest and juice, flour and baking powder, almond flour and cranberries.
Pour the mixture over the pre-baked base.
Bake for a further 40 minutes or until the top is golden brown.
 Wait until it has cooled completely before cutting into squares.
